01 Salsa - boil 4 roma tomatoes.JPG
02 Salsa - stir fry 13 chilis de arbol in a little oil.JPG
03 Salsa - Put tomatoes with skin, the chilis and a large clove of garlic in the blender.JPG
04 Salsa - Blend until the little chilli flakes have disappeared, add salt to taste.JPG
05 Salsa - voila.JPG
06 Fondue - Stirfry some finely chopped onion, and finely chopped roma tomato, half of a mexican pork chorizo sausage in some oil.JPG
07 Fondue - pour mixture over about half a pound of baby Jack cheese and stick in a 350F oven.JPG
08 Fondue - it is done when the cheese has melted.JPG
09 Fondue - now stir all together.JPG
10 Fondue - Nuke some thick tortillas, put the fondue on, roll and enjoy.JPG
11 Rice - Stir fry a cup of rice in some oil on high heat, add finely chopped clove of garlic or garlic cube.JPG
12 Rice - Add 3 cups of hot tomatoe broth (made with 2 cubes) and simmer on low heat.JPG
13 Rice - it is done when all liquid is absorbed and little holes appear in the surface of the rice.JPG
14 Beans - On high heat stirfry a small hand of finely chopped onion, add a large can of pinto beans and use the masher to partly mash the beans, let simmer on low heat.JPG
15 Mole - cook 6 chicken breasts with 1 onion, 2 cloves of garlic and some salt.JPG
16 Mole - use 2 cups of the broth, add 90 gr of mexican chocolate, a jar of mole base and blend into a smooth saus.JPG
17 Mole - Coat a pan with oil and preheat, add the mole and heat up while stirring, it will darken en smell heavenly.JPG
18 Mole - add the saus to the chicken.JPG
19 Mole - That looks very good.JPG
20 Take a little something of each dish, except the salsa.JPG
 
21 Drizzle with Mexican sour cream.JPG
